simple amazing brekky idea..

Baked Egg Cups

12 Eggs
12 thin slices of round deli ham
1/2 cup of your fav parmesan cheese (i've only used parmesan)
1/2 cup diced spring onion
Fresh cracked sea salt and pepper

Prehead oven to 200 degrees (my ancient oven is in F- so 400 degrees for me). Spray a muffin tin with cookng spray. Lay a piece of ham in each hole creating a ham cup. Crack one egg into each hole and sprinkle with S and P.
Bake the eggs for about 12 mins..until the white is firm an the yolk still looks runny.
Be careful when removing the eggs, top them with grated cheese and spring onion.
Serve immediately
