we like it cos it's coco...

Co Yo is officially the first Aussie company to make ice cream and yoghurt with coconut milk (yes, three of our favourite things-nom nom). To top it off, it's lactose and gluten-free...as the crew there say..'it's heaven in a mouthful'. Can't wait til it hits my tastebuds for the first time...

Or you could attempt to make your own, but no promises it's half as good as the 'real deal'...
To make coconut ice cream you'll need:
• 400 ml evaporated milk
• 400 ml condensed milk

• 400 ml coconut milk
• 5 ml almond extract
• nutmeg, grated
• shredded coconut, to decorate
Mix together the three different milk types in a large freezerproof bowl and stir in the nutmeg and almond essence.

Chill in a freezer for 2 hours. Remove from freezer and whisk the mixture with an electric whisk until it is fluffy.
Pour into a freezer container, then cover and freezer
